The Forge is introducing a new Sunday tradition at The Ritz-Carlton Abu Dhabi, Grand Canal with the launch of its first Sunday Roast. Beginning 1 November and served every Sunday from 1pm to 4pm, the new three-course menu takes the hallmarks of a classic roast and gives them The Forge treatment, combining premium ingredients, precise cooking techniques, and the award-winning steakhouse’s established expertise in exceptional cuts.

At the helm is Chef de Cuisine Nazerke Kossaliyeva, whose 16-year international career spans Mediterranean, Italian and premium steakhouse cuisine. With a particular focus on premium meat craftsmanship, Kossaliyeva has approached the menu with respect for the traditions of a Sunday Roast, keeping the generous portions, familiar flavours, and classic accompaniments that have long made it a Sunday lunch favourite.

The Sunday table begins with house bread and butter, then moves to the restaurant’s signature salad before the main event. Guests can choose between Roasted Premium Striploin, Roasted Lamb Rump, and Roasted Half Chicken, each served with classic Yorkshire pudding, goose-fat roasted potatoes, butter-glazed green peas, and rich homemade gravy.

The striploin and rump are marinated with rosemary and thyme from the hotel’s vertical farm, garlic and olive oil, before being cooked sous-vide at a controlled low temperature to preserve their tenderness and natural juices, then roasted to develop a caramelised exterior. The chicken begins with an overnight brine of salt and citrus zest before being marinated with fresh herbs and garlic, cooked sous-vide and finished in the oven until golden.

Served alongside are sharing dishes of cauliflower gratin with a golden crust, grilled vegetables, and garlic mashed potatoes.

Warm apple crumble provides a fitting finish, served with vanilla custard and ice cream freshly churned during service.

Complemented by The Forge’s premium wine selection and intimate setting, the new Sunday Roast brings the steakhouse’s signature approach to premium cuts and precise cooking to one of the most enduring Sunday traditions.
