Emirates Palace Mandarin Oriental, Abu Dhabi is pleased to announce the appointment of Chef Mirsat Yilmaz as Chef de Cuisine at Broadway, the hotel’s contemporary American restaurant and bar. Marking his arrival, Chef Mirsat unveils a thoughtfully reimagined menu that reflects his own interpretation of American cuisine – one shaped by global culinary influences, bold flavours and a deep respect for craftsmanship.
For Chef Mirsat, American cuisine is defined by the countless culinary influences that have shaped it over generations. It’s this diversity that forms the foundation of Broadway’s new menu. Rather than reinventing classic dishes, his approach refines them through thoughtful technique, carefully sourced ingredients and subtle, unexpected touches that elevate every plate while remaining true to the spirit of the original.
Bringing more than a decade of experience across luxury hotels, fine dining restaurants and internationally acclaimed kitchens, Chef Mirsat joins Broadway from Studio Frantzén at Atlantis Dubai, having previously held senior roles at Seafire Steakhouse, The Arts Club Dubai, MINA Brasserie at Four Seasons Hotel DIFC, Il Ristorante – Niko Romito at Bulgari Resort Dubai, and Michelin-starred Lasai in Rio de Janeiro. Throughout his career, he has developed a culinary style rooted in precision, creativity and ingredient-led cooking, earning recognition as a regional finalist in the S.Pellegrino Young Chef Competition.
Rooted in a philosophy of creating food with depth, character and honesty, Chef Mirsat believes every dish should tell a story through flavour, technique and carefully selected ingredients. His vision for Broadway is to create a restaurant that guests return to not only for exceptional food, but for its atmosphere, energy and sense of occasion – where familiar American flavours are reimagined with confidence and care.
“My vision for Broadway is to create a modern American brasserie that guests return to not only for exceptional food, but for the atmosphere, energy and sense of occasion. I want every visit to feel memorable, where classic American flavours are reimagined. My ambition is for Broadway to become one of Abu Dhabi’s most exciting dining destinations, recognised for consistently delivering an experience that guests are eager to share and revisit,” says Chef Mirsat Yilmaz.
That philosophy comes to life throughout Broadway’s new menu, where house-smoking, grilling, dry-ageing, preserving and fermentation are used not as techniques for their own sake, but as tools to build deeper flavour and allow premium ingredients to shine. The result is a collection of dishes that feels comforting yet contemporary, familiar yet full of unexpected character.
Among Chef Mirsat’s signature creations is the Homemade Smoked Sausage, prepared entirely in-house before being smoked and served with red kapya pepper, silky potato purée and mustard jus. The Local Seabream Crudo combines tomato cream, preserved plum and basil for a vibrant, refreshing start, while the Steak Tartare is paired with richly flavoured bone marrow-infused sourdough. Broadway’s interpretation of Steak and Frites, finished with its own Café de Paris sauce, sits alongside the deeply savoury Wild Mushroom Pizza, layered with three varieties of mushrooms, Parmesan and egg yolk for a rich umami finish. Alongside these highlights, the menu features premium grilled meats, fresh seafood, handcrafted burgers, vibrant salads, comforting pastas and indulgent desserts, complemented by an imaginative cocktail menu.
Chef Mirsat’s appointment and the launch of the new menu mark an exciting new milestone for Broadway, inviting guests to discover a fresh perspective on contemporary American dining at Emirates Palace Mandarin Oriental, Abu Dhabi.
